Tasting notes

 

Colour: pale gold with green reflects
Mouth: primary attack on the jasmine taste then ripped apricot, slide on the roasted hazelnut keep on going with revealing the aromas of the green tea. It ends on a light bitterness of the green tea and the oxidation aromas due to the fermentation process of the Kombucha.
Nose: vivid flowery jasmine, light oxidation that brings into secondary elderflower and rhubarb aromas, fresh cut grass notes
Bubble: creamy but energetic
Acidity: well balanced with a light sweet after taste
Pairing: dessert, raw fish, light starter composed with veggie.

Colour: amber red brick reflects
Mouth: round and velvet attack, the first mouth reveals a playfull palette of citrus that in the end focuses on the bergamot flavors, first by expressing the juice part of the fruit to progressively lead you on the skin aromas, it evolves on the black tea range and some grilled bread notes, as well as pecan nuts, ending on a refreshing feeling with a light characteristic astringent mouth due to the black tea tannins.
Nose: bergamot skin, woody, warm dry black tea leaves
Bubble: creamy and smooth
Acidity: characteristic of a ripped citrus with a rich chestnut honey after taste
Pairing: dark chocolate, white meat, braised fish

Tasting notes

 

Colour: amber copper reflects
Mouth: smooth attack on the smoke aromas, warm oak barrel, dried cèpe and dried herbs slide on the longan aromas, then come the resin palette from the burned one to the fresh pine notes that lead on the iodine feeling at the end; like if you would sit on a rocky cliff surrounded by pine trees at 17h on a warm afternoon. Finish with a light bitter due to the tea and fresh menthol feeling due to the pine. Remind of a smoked whisky.
Nose: smoky, oak and black tea, oxidation notes
Bubble: small & delicate but punchy
Acidity: light balanced by a warm body
Pairing: grilled red meat, grilled lobster, octopus, roasted veggies, blue cheese, poached fruits.
